Gousto Mexican Refried Bean & Corn Quesadillas Recipe

I'm a huge fan of Mexican styled food; fajitas, nachos, burritos and enchiladas. You name it, I love it! So without any doubts, the Refried Bean & Corn Quesadillas definitely caught my eye.

Gousto Refried Bean & Corn Quesadillas

For these quick and tasty Quesadillas (serves 2), you will need;

- 6 Tortilla Wraps
- 1/2 a can of Sweetcorn
- 1 can of Kidney Beans
- Grated Mature Cheddar Cheese
- 1 Spring Onion
- 2 Garlic Cloves
- 1 Lime
- 1tsp Smoked Paprika
- 1tsp Ground Cumin
- 1 sachet of Chipotle Paste
- 2 sachets of Mayonnaise

Overall, I was extremely pleased with how my Quesadillas turned out. The recipe was so simple to follow, and for a first attempt, I think I did a pretty good job. The ingredients used to make this dish were so fresh, and the flavours compliment each other perfectly, from the smoky Refried Beans to the crisp Sweetcorn, followed by the fresh Spring Onion and the creamy Cheese. It was a match made in heaven! The Chipotle Mayo accompaniment was to die for. It really reminded me of the Southwest Sauce you can get in Subway. It was simply delicious. I would definitely make these again!
