For this tasty Thai treat, you will need the following ingredients for 2 people;
- 1 Aubergine
- Fresh Ginger
- 1 Red Chilli
- 80g Sugar Snap Peas
- Basmati Rice
- 3 Dried Kafir Lime Leaves
- 50g Solid Coconut Cream
-1 Lime
- Roasted Peanuts
- 1 Vegetable Stock Cube
- 80g Tenderstem Broccoli
- 40g Thai Green Curry Paste

Overall, I was pleasantly surprised with this vegetarian dish. Before, I've had only had a Thai Chicken curry previously, and this one is a great alternative and was definitely just as good! A great Asian inspired dish that is bursting with flavours. So zingy with the fresh Lime and a gorgeous coconut green sauce. The flavour combinations were just sensational. Packed full with crisp and crunchy vegetables, topped off with a fiery chilli kick and crunchy crushed peanuts,this Thai curry was absolutely delicious!
